Udon
What is it and what is it made of?
Udon is a noodle made from wheat flour. The wheat flour is first kneaded and then stretched into long noodles and boiled in water.
How is it eaten?
Udon may be served hot in a soup or cold with a dipping sauce and is eaten throughout the year.
Is it gluten free?
Udon is made from wheat flour and is not gluten-free. Also, the soup and dipping sauce typically served with udon noodles contains soy sauce, which more often than not contains gluten.
Are there alternatives?
Recently, it is possible to purchase or order udon noodles made only from rice flour. But this is still rare and those on a gluten-free diet should avoid eating udon.
