We opened in December 2014 using 100% bread flour and gluten free products to make bread.
I had been making bread for 30 years but seeing that more people than I realized have food allergies, so I quit my job working at a hospital and opened a rice flour bakery called ‘micco’.
We don’t use any wheat, eggs or milk products and use rice flour and soy milk to make our products.
The texture is unique to rice flour and is chewy. You can enjoy the original texture of bread made from rice flour.
